A great vehicle for anything you like! Can be sweet or savoury but super nice with something creamy or melty

Here, with a creamy vegan ricotta, roasted red peppers and zucchini, kalamata olives and sprinkled with black chilli flakes 
Pickled Radish and cabbage flowers on the side..

This braised cabbage dish has been a go-to for me This braised cabbage dish has been a go-to for me for at least 15 years but today I'm thinking about how it has evolved with time.. And how you can make it your own 🙂

You can't go wrong with red cabbage apples and red wine.. the sweetness and tannins and bitterness complement each other so well but you can add some things to really highlight these flavours and add to the complexity. 
🌶
Throw some whole cloves of garlic in and cranberries make a nice sour note. Thyme and rosemary gove it a lovely earthiness and lately I've been adding some green peppercorn to give some bites an exciting fresh spiciness. I think what I love about this is that every bite is different! 
After cooking I crumbled on some of our coconut bacon to add a little crunch and smokiness. 
It's got everything!

•	1/2 cup (112g) Vegan Butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1/2 cup (100g) White Sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1/2 cup (100g) Brown Sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1 tsp Vanilla Extract or pack of vanilla sugar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1 cup (125g) Flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	2/3 cup (56g) Unsweetened Cocoa Powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1 tsp Baking Soda⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1/4 tsp Salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	1 Tbsp Soy Milk (or other non-dairy milk)⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	3.5 oz (100g) Vegan Dark Chocolate chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	Chopped dates ⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	Red pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
•	Flakey or Himalayan salt for topping ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.	Preheat the oven to 350°F (180°C).⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.	Add the vegan butter and sugar to an electric mixing bowl and cream together with the vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.	Sift the flour and cocoa powder into a mixing bowl and mix in the baking soda and salt.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4.	Add the dry ingredients to the wet, mixing in by hand until crumbly.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5.	Add the 1 Tbsp soy milk or other non-dairy milk and mix into a thick cookie dough.⠀⠀⠀⠀⠀⠀⠀⠀⠀
6.	Add the chocolate chunks and dates and mix in. Your cookie dough will be crumbly, but sticky enough to roll into balls.⠀⠀⠀⠀⠀⠀⠀⠀⠀
7.	Roll into small balls and space evenly on a parchment-lined baking tray. Top with a few peppercorns and a pinch of salt.⠀⠀⠀⠀⠀⠀⠀⠀⠀
8.	Bake for 9 minutes. The edges will be firm but the cookies will still be soft in the middle. This is fine, they will firm up as they cool. Be careful not to overbake them :)⠀⠀⠀⠀⠀⠀⠀⠀⠀

While your barley is cooking marinade some tofu cubes or steaks in orange juice, soy sauce, a bit of maple syrup, minced garlic and 5 spice (this beautiful mix keeps things feeling festive with anis and cinnamon) But if you don't have 5 spice, garam masala can work or make up your own mix 🙂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake or fry the tofu⠀⠀⠀⠀⠀⠀⠀⠀⠀

Hard fry the broccoli in a pan with some coconut oil adding a bit of water to soften it up as needed (also some carrot ribbons made with your peeler could be nice, add those to the pan right at the end) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add some salt and pepper and another daub of coconut at the end just to coat⠀⠀⠀⠀⠀⠀⠀⠀⠀

cut your physalis' in half or quarters and when your barely is done stir through some orange juice, orange zest, soy sauce, a splash of olive oil and some pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀
